Qi and Blood-Nourishing Chicken Soup

Chicken soup has been regarded as a nourishing meal for both the body and soul across many cultures worldwide. In Chinese culture, chicken soup often includes various herbs to create a restorative herbal treatment, making it even more beneficial. According to traditional Chinese medicine, this recipe is effective in tonifying Qi and Blood. It strengthens the body’s underlying nutritive and energetic systems, making it an ideal meal for those feeling run down or overextended.

Herbs in this Recipe and Their Benefits

  • Angelica root is a good herb for tonifying blood, especially for women post-menstruation. 
  • Astragalus has been shown to stimulate the immune system and improve kidney function. 
  • Goji Berries have anti-inflammatory properties and are also immune stimulating. 
  • Red Jujube Dates also have anti-inflammatory properties and stimulate the immune system. 

Adding these herbs greatly improves the restorative nature of this recipe.  This soup has slightly sweet overtones with an underlying savory and salty base.  It is truly delicious.

Ingredients:

2 Cornish Game Hens or 1 Small Chicken

4 Cups Chicken Bone Broth

4 Cups Water

A Pinch of Salt

2 Slices of Ginger

6 Pieces of Astragalus/Huang Qi (20 Grams)

1 Medium Size Slice of Angelica/Dang Qui (10 Grams)

6 Pieces of Chinese Red Dates/Da Zao (10 Grams)

1 Tablespoon Goji Berries/Gou Qi Zi (10 Grams)

4 Garlic Cloves, Peeled and Minced

2 Tablespoons Rice Wine Vinegar

3 Tablespoons Soy Sauce

2 Large Carrots Diced

2 Celery Stalks Diced

3 Green Onions Chopped

Dash of Olive Oil

Directions:

  1. Soak Da Zao berries in a small dish of cold water.
  2. Add chicken, water, bone broth, and salt in a large soup pot.   Increase to a boil, then reduce to a simmer.
  3. Add a dash of olive oil, ginger, dang gui, and astragalus to the pot.  Cover and cook on low for 30 minutes.
  4. Take soaked Da Zao berries and slice thinly, removing the pit.
  5. Add Da Zao, Gou Qi Zi, garlic, and rice wine vinegar to the pot.
  6. Add carrots and celery to the soup.  Cook for another 10 minutes.
  7. Add green onions and soy sauce.
  8. Serve and enjoy.
